Meet Paul, our Head Chef at St Luke’s Green, Woolloongabba. Paul is a valuable part of Greengate’s Brisbane team, and not just because he cooks some of the best cakes and meals we have ever tasted. He has recently returned from his eighth trip to Mongolia where he volunteers at an orphanage, teaching young people how to cook.
Lotus Children’s Centre provides shelter, care and support to build happy and positive futures for abandoned and abused children in Mongolia. Paul discovered his passion for helping these children on his first trip to the orphanage back in 2011. He started out teaching children how to bake in a small room with no water and no kitchen; it was then that Paul knew he wanted to do more to help these children.
Paul returned to Australia and raised enough money so that the orphanage could build a bakery at the Centre in Gachuurt. Since then he has continued to return, each time bringing with him fresh ideas, valuable knowledge, and a friendly smile. Paul says ‘my mission in Mongolia is to provide knowledge in baking and cooking skills, which leads to independence and better self-esteem. With knowledge we can break the poverty cycle.’
Many of the children at Lotus Children’s Centre are street kids, or have been neglected by their parents and society. A lot of the children are quite small for their age due to their lack of healthy, nutritious food when they were younger. Paul is now focusing on educating the children on what is healthy food and how it effects your body.
The bakery has now been running for six years, and Paul has just embarked on the baking journey again with his third group of teenage students. ‘Currently a twelve-year-old boy, Gambat is the main baker,’ says Paul, ‘I spent most of my time getting him up to speed with the bread basics, but like most kids, he was most interested in the cake!’
Back home in Australia, Paul’s passion for good food and enriching the lives of those around him continues. At St Luke’s Green he is very popular with the residents of our Retirement Village
