Indulge with Chef Paul

Now that the weather is finally starting to cool down, we can’t help but indulge our sweet tooth every now and then. We asked Paul, our Head Chef at St Luke’s Green and pastry whiz, for his favourite recipe to bake when he feels like treating himself. Personally, we think this delicious brownie recipe is just as good for your wellbeing as a spot of meditation.

  • 250gm dark chocolate
  • 250gm unsalted butter
  • 4 eggs
  • 2 teas vanilla essence
  • 50gm plain flour
  • 50gm cocoa
  • 440gm caster sugar
  • 95gm white choc chips
  • 95gm milk choc chips
Melt the dark chocolate with the butter. Beat the egg with the vanilla. Sift the flour and cocoa together. 
Add the sugar and choc chips to the flour and cocoa mix, pour in the melted chocolate and the egg mix. Stir to combine. Bake at 160-180 for 45 minutes.
Chef Paul says:
"You might want to adjust the baking time for these brownies and take them out a little earlier, depending on your oven and personal preference for fudginess - the softer you like your brownie, the less baking time."
